Ingredients for 4 people:
1 kg mussels, 400 g. rice, 3 onions, 6 tomatoes, 50 g. grated pecorino cheese, 1 clove of garlic, some parsley, celery, extra-virgin olive oil, salt and pepper.
Preparation:
Wash and clean the mussels and then open them with a knife.
Clean the potatoes and cut them into thick slices. Wash and peel the onions and then mince parsley, garlic and celery.
Pour some oil into a baking tin (30-cm-diameter) and place the onions, the potatoes, the herbs, the rice and the mussels. Then add the grated cheese, some salt and pepper and continue with the layers.
Finally place the tomatoes on the last layer and season with some grated pecorino, salt, pepper and oil.
Fill the tin with water and cook in the oven for some 45 minutes at 180 degrees.
If necessary add more water while cooking.
